Across the Sea is a pretty unique beer as it is dry hopped entirely with Cascade hops, the fun part is that we blend 50% Billy Goat Cascades with 50% New Zealand Cascades. They play really nicely together and make for a truly unique all Cascade beer with notes of tropical fruit, tropical flowers, and a finishing note of pine.
We use Billy Goat hops in nearly all of our beers for at least the bittering hops and we frequently highlight their hops in the dry hop in hop forward beers. I love the character of Cascades grown in the high desert, it's a fun way to add a little local terroir to our beers!

A bright, drinkable pale ale for all occasions! The Columbus from Billy Goat provides those nice dank resin notes and seems to accentuate the fruit notes from the Simcoe.

Carver Brewing Company began as Carver Brother's Bakery in Winter Park Colorado in 1983. The brothers moved the business to Durango in 1986. In 1988 we became the first brewpub in the southwest, and the second brewpub in Colorado since prohibition. In the decades that followed, Carver’s has become one of the most medaled breweries on the Western Slope, expanded to create Durango’s largest outdoor Beer Garden, and has donated over $600,000 to community organizations. Carver’s is one of the most-loved local institutions in Durango.

we froze some hand-foraged AZ spruce tips from our annual camping trip in May, and then brewers Sam and Jason went on a trip of their own to harvest fresh spruce branches. We then incorporated these into the mash and did a Sahti method where the branches and needles served as a mash filter.

Compa is simultaneously malty and easy drinking. As New Mexico a Beer Gets! 5.7% ABV 20 IBU

This gem of a Pilsner is made in the Italian style, super dry, super bubbly, and supremely hoppy. Crystal and Grungeist hops were added with reckless abandon in the kettle and again for fermentation hopping. Esmerelda shines as an example of innovation within the parameters of a classic style. Citrus and herbal notes complement a dry and elegant malt profile making for a beautiful, refreshing pilsner.

For our 2023 version of our late winter/early spring Pale Ale we used Cascade and Columbus hops in the mash, whirlpool and dry hopped. Copper was used in the whirlpool and dry hopping. We used a 50% Cosmic Punch and 50% Chico blend from Omega yeast. We wanted to add some thionals, without over doing it. Grain bill was 2 row, dextrin, and crystal 60.

Trail Wet Hop Billy Goat Cascade was wet-hopped with bucket loads of fresh Cascade we helped pick in the field. From there, Tree House covered them in a blanket of protective nitrogen and drove straight home in a refrigerated Sprinter van before adding them directly to this beer. This characterful Pilsner pours a golden yellow.
